Margherita Pita Pizza, for when you are too hot to cook.

It's disgustingly hot outside, right? As in too hot to move. Too hot to think. Beyond too hot to even consider going near the kitchen. I was a fool and made cake this week. I paid the price for over an hour, sweating and whining and generally feeling gross. 

It is not the time to be baking or cooking anything super intensive. Stick with the simple basics. Salads with light dressing. Easy to assemble sandwiches. Five minutes pizzas. 

This margherita pita pizza is nice because it is small, super quick and easy and packs all the punch of a full sized pizza. You can spend less time in front of the oven and more time in the pool. Or in front of the air conditioner. Or with your head in the freezer.

Margherita Pita Pizza

Serves 2 

2 pieces pita bread

1 cup chunky tomato marinara sauce

1 cup mozzarella cheese

1 Tbsp. fresh basil, chopped 

Preheat the oven to 350 degrees. Lay your pita bread on a foil-lined baking tray. Top each with 1/2 cup sauce, 1/2 cup cheese and 1/2 Tbsp. basil. Bake for 20 to 25 minutes until crispy.
